Big cook little cook;birthday surprise

Hello Beautiful people today's post is a Minnie Mouse cupcake recipe!! We are writing this post because today is Caitlin's Birthday....SO HAPPY BIRTHDAY CAITLIN!! We have done Minnie Mouse inspired decor because us 3 all love Disney and it brings back memories of when we went to Disneyland earlier this year! Without further a do here is what you will need...
Ingredients:
For the sponge:
110g of margarine or butter
110g caster sugar
2 free range eggs
1tsp vanilla extract
110g self raising flour
2 tbsp milk

Icing:
140g butter
280g icing sugar
Food colouring of your choice (optional)
Roll out icing
Bag of milk chocolate buttons
Method:

1. Preheat the oven to 180C/350F/Gas 4

2. Cream the butter and sugar together in a bowl until pale.

Gradually beat in the eggs and stir in the vanilla extract.

3. Fold in the flour using a large metal spoon, adding a little milk until the mixture is of a dropping consistency.

Then place the mixture into the paper cases until it is half way full. (I forgot to mention make sure you place 10 paper cases in a muffin tray)

4. Bake in the oven for 10-15 minutes, or until golden-brown on top and a knife inserted into one of the cakes comes out clean. Set aside to cool for 10 minutes, then remove from the tin and cool on a wire rack.

5. For the buttercream icing whisk together the butter and icing sugar until it is soft.

6. Then add the milk and whisk until everything is consistently bonded together.

7. Add the food colouring and mix until well combined.

8. Spoon the icing into the centre of the cupcake and using the back of the spoon spread around the top of the cupcake until it is all covered and at the thickness you want

9. Then make the bows for the Minnie Mouse head
Take a small part of the roll out icing, I used yellow because there was no red...
Anyway place the ball onto a clean surface and make it into a square
Then pinch the middle of the square and push the side to form the bow shape
Then using the back of a knife had the detailing like creases and centre of the bow however you can decorate you bow however you like
Then using your milk chocolate buttons place 2 at the back of the cupcake
Then add your bow and there you have it a Minnie Mouse cupcake!!
Hope you liked today's post and again Happy Birthday Caitlin ,make sure you go check out Caitlin's blog http://eatsleepandfashion.blogspot.co.uk/?m=1
